Blueberry Sorbet


It is back! One of the loves of my life, the blueberry is back!

I had this awesome sorbet last week and it triggered something. A sorbet is pure genius. the taste, the flavour and the process. Well, maybe the weather is cool outside for a scoop of delicious, tangy-sweet with a hint of peach schnapps flavored blueberry sorbet, but honestly, not for me! if you change your mind by the end of this post, yay! else, well, you are made of steel my friend! :) Ok, so i'm going to stop right there. and let the pictures do the talking. Enjoy!



What you need:

140 g Blueberries fresh or frozen (if frozen, thaw first)
1/4 cup sugar
1/4 cup water + 3 tablespoons 
2 tablespoons cointreau or peach schnapps
1/4 cup orange juice




How you go about it:

-Heat the water and sugar in a saucepan over medium heat, add the blueberries and let it cook over the boil for ten minutes, covered.

-At the end of the ten minutes, switch off the flame and leave the pan covered and to cool to room temperature.



 -Add the orange juice, the schnapps and the 3 tablespoons of water to the blueberries and purée it till very fine.

-Pour into a flat bottomed vessel with a tight lid and let it freeze for an hour and a half. Take it out and blend to break up ice crystals. Return back to the freezer and let it set overnight or for 4 hours.

P.S: an interesting combination that i liked with the sorbet was mint. Add a few sprigs for colour and the try having a scoop with the sprig, you may just like it! :)

P.P.S: Good to know: Sorbet has been around for ages... like ages! It was used as a palette cleanser in between courses before the main course. Add to the fact that that it tastes yum!
